How It's Made

  1. Make a still base wine, typically higher in acid and lower in alcohol than a standard table wine, since it needs to support a second fermentation still to come.
  2. Add sugar and yeast to trigger a second fermentation, either inside the final bottle or in a large pressurized tank.
  3. Trap the resulting CO₂ — inside the bottle (traditional method) or in a pressurized tank (tank method), each producing a distinctly different bubble texture.
  4. Remove spent yeast (traditional method only) and adjust final sweetness with a dosage, the last significant style decision before release.

Traditional Method

Used for Champagne, Cava, and many premium sparkling wines, the traditional method conducts the second fermentation inside the very bottle the wine will be sold in. The spent yeast (lees) is left in contact with the wine for months or years, adding toasty, bready complexity, before being removed through riddling and disgorgement. Riddling — gradually rotating and tilting each bottle over weeks until the sediment collects in the neck — was historically done entirely by hand, a labor-intensive process now largely automated by machines called gyropalettes at all but the smallest, most tradition-bound houses.

Disgorgement itself is a small piece of theater as much as technique: the bottle's neck is frozen, trapping the collected sediment in a small plug of ice, which is then popped out under the wine's own internal pressure before the bottle is quickly topped up and resealed. Champagne law sets minimum lees-aging periods — longer for vintage bottlings than non-vintage — precisely because this contact time is considered central to the style's character.

Tank Method

The tank (or Charmat) method conducts the second fermentation in large pressurized steel tanks before bottling under pressure, preserving fresh fruit character rather than building the yeasty complexity of the traditional method. Prosecco is the best-known tank-method wine, and the process is significantly faster and cheaper to execute — often finished in weeks rather than the months or years traditional-method wine spends aging on its lees, which is the single biggest reason tank-method sparkling wine is typically far less expensive.

Because tank-method wine skips extended lees contact, producers instead lean on grape selection and precise temperature control to build aromatic complexity, favoring naturally fragrant grapes like Glera that show well without the bready, autolytic notes traditional-method wine develops over time.

The Sweetness Scale

Counterintuitively, “Brut Nature” or “Extra Brut” Champagne is the driest style, while “Doux” is the sweetest — the scale runs from Extra Brut through Brut, Extra Dry, Dry (Sec), Demi-Sec, to Doux, with most Champagne sold today at Brut. The final dosage — a small addition of sugar and wine blended in just before final corking — is what determines where a given bottle lands on this scale, and is one of the last creative decisions a Champagne house makes before release, often used to fine-tune a particular vintage's natural acidity.

Historical Champagne was considerably sweeter than what's sold today — Brut only became the dominant style in the late 19th and early 20th centuries as drier tastes, particularly in Britain and France, shifted demand away from the sweeter Doux and Demi-Sec styles that had once been standard.

Beyond Champagne

Cava (Spain) uses the traditional method but different grape varieties at a lower price point; Crémant is French traditional-method sparkling wine made outside Champagne; Prosecco (Italy) uses the tank method and the Glera grape for a fruitier, more floral style. Germany's Sekt and England's increasingly respected sparkling wines (often made from the same three grapes as Champagne, grown on similar chalky soil) round out a global category that has grown well beyond Champagne's original template.

England's sparkling wine industry, concentrated in southern counties like Kent and Sussex, has drawn particular attention in recent decades precisely because its chalky soil is geologically continuous with Champagne's own — the same underlying bedrock stretching beneath the English Channel — giving English sparkling wine a genuine claim to similar terroir despite the different climate.

Grape Varieties Behind Champagne

Champagne is legally permitted to use seven grape varieties, though the vast majority of production relies on just three: Chardonnay (bringing elegance and finesse), Pinot Noir (structure and body), and Pinot Meunier (fruitiness and earlier drinkability). Most Champagne is a blend of all three, sometimes drawing on dozens of individual base wines from different vineyards and vintages — a blending complexity most still wines never approach.

Blanc de Blancs Champagne, made entirely from Chardonnay, tends toward a lighter, more citrus-driven elegance; Blanc de Noirs, made from the black-skinned Pinot Noir and Pinot Meunier grapes despite being pressed into a pale wine, typically shows more body and red-fruit depth — two ends of a stylistic spectrum built from the same three grapes.

Vintage vs. Non-Vintage

The majority of Champagne sold is non-vintage (NV), a consistent house blend built from multiple years specifically to maintain a stable style regardless of any single year's weather. Vintage Champagne, made only in years judged exceptional enough, must by law be composed entirely of grapes from that single year, and generally receives longer aging before release — a rarer, more weather-dependent expression of a house's style.

Building a consistent non-vintage blend year after year is arguably a harder technical challenge than making a good vintage wine, since it requires a house's chef de cave to reliably recreate a signature house style from raw materials that vary every single harvest — a skill that defines a Champagne house's reputation as much as any individual vintage release does.

Prestige Cuvées

Above both non-vintage and standard vintage bottlings sit a house's prestige cuvées — flagship wines like Dom Pérignon or Cristal, typically made only in exceptional years from a house's very best vineyard parcels and aged considerably longer than standard releases before disgorgement. These wines command a significant price premium, reflecting both genuinely superior raw material and the scarcity created by producing them only in select vintages, sometimes with a decade or more between releases.

Serving and Storing Champagne

Champagne should be opened gently rather than with a dramatic pop — controlling the cork as it eases out preserves more CO₂ in the wine and avoids losing pressure (and flavor) to a wasted, foaming burst. Once opened, Champagne fades faster than table wine, generally best finished within a day or two even with a dedicated stopper, since its CO₂ escapes steadily regardless of how carefully it's resealed.

Champagne's Legal Protection

“Champagne” is one of the most fiercely protected wine names in the world, legally reserved only for sparkling wine made in the designated Champagne region of France under traditional-method rules — a protection defended vigorously enough that even long-established uses of the word elsewhere have been challenged in court. This strict legal exclusivity is part of why the broader sparkling wine category needed so many other names (Cava, Crémant, Prosecco, Sekt) to describe wines made similarly but outside Champagne's specific, legally defined borders.

Tasting Profile

Look at the bubbles first — fine, persistent bubbles generally indicate traditional-method production, while large, fast-dissipating bubbles suggest the tank method. A coupe glass shows this off, but a flute preserves it longer. Pay attention to the bead — the steady stream of bubbles rising from a single point in the glass — since its persistence over the course of a full pour is itself a quality indicator, more reliable than the initial fizz on pouring.
