How It's Made — Quick Guide

  1. Harvest & crush grapes to release juice (must). Timing the harvest is one of a winemaker's most consequential decisions — sugar, acid, and tannin all shift daily as grapes ripen.
  2. Ferment — yeast converts grape sugar into alcohol and CO₂; red wine ferments with grape skins for color and tannin, white wine typically without them.
  3. Age in stainless steel (fresh, fruity styles) or oak barrels (structure, vanilla, spice), sometimes for months and sometimes for years depending on the wine's intended style and price point.
  4. Bottle, or for sparkling wine, trigger a second fermentation inside the bottle or a pressurized tank to trap CO₂ before the wine ever reaches a glass.

How Grape Variety and Climate Shape Every Style

Before any winemaking decision is made, the grape itself and where it grew set the outer limits of what a wine can become. Thin-skinned, early-ripening grapes like Pinot Noir favor cooler climates and tend toward lighter, more delicate wines; thick-skinned, late-ripening grapes like Cabernet Sauvignon thrive in warmer regions and build bigger, more tannic structures. Climate also governs acidity — grapes grown in cooler regions retain more natural acid, which is why a Chablis (cool, northern Burgundy) tastes so different from a Chardonnay grown in a warm California valley despite sharing the same grape. Red Wine

Red wine gets its color and tannin from fermenting juice together with grape skins. Tannin — the same compound found in strong tea — gives red wine its drying, gripping mouthfeel and is part of what allows some reds to age for decades. The longer the skins stay in contact with the fermenting juice, the more color and tannin the finished wine carries, which is why winemakers treat maceration time as a deliberate style lever rather than a fixed step. Reds built for early drinking (Beaujolais, many Pinot Noirs) use shorter maceration; reds built to age for a decade or more (Barolo, top Bordeaux) use longer maceration and heavier extraction.

White Wine

White wine is usually pressed and fermented without skin contact, producing a lighter-bodied, higher-acid wine. Some whites (like oaked Chardonnay) gain body and vanilla notes from barrel aging; others (like Sauvignon Blanc) are made in steel to preserve pure fruit and acidity. A secondary process called malolactic fermentation, in which naturally occurring bacteria convert sharp malic acid into softer lactic acid, is often used selectively on white wine to round out its texture — it's largely responsible for the buttery character found in many oaked Chardonnays.

Rosé Wine

Rosé is made from red grapes given brief skin contact — hours rather than weeks — before the skins are removed, leaving color but little tannin. Provençal rosé is famously pale and dry; other regions make deeper, fruitier styles. A smaller amount of rosé is made by blending finished red and white wine together, a method generally permitted only for still rosé outside Champagne, where the practice is actually one of the region's few legally sanctioned exceptions to skin-contact rosé production.

Sparkling Wine

Sparkling wine undergoes a second fermentation that traps carbon dioxide. The traditional method (used in Champagne) does this inside the final bottle, producing fine, long-lasting bubbles; the tank method (used for Prosecco) ferments in bulk pressurized tanks for a fruitier, simpler style at lower cost. A third, less common method — méthode ancestrale — bottles the wine before its first fermentation even finishes, trapping CO₂ from that original ferment rather than triggering a deliberate second one; it produces the lightly cloudy, often lower-alcohol style known as pét-nat.

Fortified Wine: Port, Sherry, Vermouth

Fortified wines have distilled spirit (usually grape brandy) added, boosting ABV to roughly 17–22% and, when added during fermentation, stopping the yeast early to leave residual sweetness — the method used for Port. Sherry is fortified after fermentation and can be bone dry (Fino) or rich and nutty (Oloroso), often aged using the solera system that blends multiple vintages. Vermouth is fortified wine infused with botanicals, forming the backbone of classic cocktails like the Martini and Manhattan. Because fortification was originally a preservation technique for wine traveling long distances by sea, all three categories retain a much longer shelf life once opened than standard table wine.

How Wine Ages, and Why Most of It Shouldn't

The overwhelming majority of wine produced today is made to be drunk within a year or two of release, not cellared for decades — a common misconception among new wine drinkers. Only wines with enough tannin, acid, and concentration to evolve slowly (generally full-bodied reds, high-acid whites like Riesling, and vintage Port or Champagne) reward long-term storage; ordinary bottles simply fade rather than improve. Old World vs. New World Winemaking

"Old World" (Europe, especially France, Italy, and Spain) and "New World" (the Americas, Australia, South Africa, New Zealand) function as a broad, imperfect shorthand for two winemaking philosophies rather than a strict geographic rule. Old World wines are traditionally regulated heavily by regional appellation law, often prioritizing restraint, acidity, and a sense of place over ripeness; New World wines historically leaned toward riper fruit, higher alcohol, and more prominent oak, though the gap has narrowed considerably as winemakers on both sides borrow techniques and stylistic goals from one another. Neither approach is inherently better — they simply reflect different regulatory traditions and different growing climates shaping what a given wine tends to taste like.

How to Read a Wine Label

European wine labels traditionally emphasize place (a Burgundy, a Chianti, a Rioja) over grape variety, on the assumption that regional law already dictates which grapes are permitted; New World labels, by contrast, usually foreground the grape variety itself (a Cabernet Sauvignon, a Chardonnay) since New World regions typically allow much greater grape-variety flexibility. Understanding which convention a given label follows is often the fastest way to predict a wine's style before ever opening the bottle, since a regional European name effectively encodes grape variety information a shopper unfamiliar with that region's rules might otherwise miss entirely.

Tasting Profile

Hold the glass by the stem, tilt it against a white background to check color and clarity, swirl to release aroma, and smell before you taste — most of what you perceive as "flavor" is actually aroma reaching your nose from the back of your throat. Take note of the wine's finish, too: how long the flavor lingers after swallowing is one of the more reliable, if subjective, indicators of a wine's overall quality and concentration.
