Three Things Wood Does

  1. Adds — extracts compounds (vanillin, tannins, lactones) directly from the wood into the spirit.
  2. Subtracts — the porous wood lets harsh, volatile compounds slowly evaporate out ("the angel's share").
  3. Interacts — oxygen seeping through the wood triggers slow chemical reactions that mellow and round out flavor over years.

American Oak

American oak (Quercus alba) is dense and fast-growing, rich in vanillin (a compound that tastes and smells like vanilla) and oak lactones that contribute coconut-like notes. By U.S. law, Bourbon must be aged in new, charred American oak barrels — the char layer caramelizes wood sugars, adding notes of caramel and toasted sugar that dissolve into the spirit over time. Because these barrels can only be used once for Bourbon, they're overwhelmingly sold onward for aging other spirits.

French Oak

French oak (Quercus petraea and Quercus robur) is tighter-grained and generally imparts more subtle spice, fine tannin, and less overt vanilla than American oak. It's the traditional choice for Cognac and much fine wine, prized for adding structure and complexity without overwhelming the base spirit's own character. Ex-Bourbon Casks

Because Bourbon barrels can legally be used only once, a huge secondary market exists for "ex-Bourbon" casks, which are shipped worldwide — especially to Scotland — to age Scotch whisky. A cask that already held Bourbon imparts a gentler version of American oak's vanilla and caramel character, since much of the wood's most intense extractable flavor was already pulled out during the Bourbon's own aging. This is why so much Scotch shows vanilla and caramel notes despite Scotland having no domestic oak-barrel tradition of its own.

A cask's flavor contribution doesn't reset each time it's refilled, but it also doesn't disappear. A "first-fill" ex-Bourbon cask (used once before, for Bourbon) still has a great deal of extractable flavor left and imparts it fairly quickly; a "second-fill" or "refill" cask, having already given up much of its vanillin and lactones, contributes more slowly and gently, letting the spirit's own distillation character show through more clearly. Distilleries manage a mix of first-fill and refill casks deliberately, much like a chef balances strong and subtle seasoning.

The Angel's Share

Barrels are porous, and a small percentage of the spirit evaporates through the wood every year — a loss distillers poetically call the "angel's share." In cool, damp climates like Scotland, this loss is mostly water, gradually raising the spirit's ABV concentration over time; in hot, dry climates like Kentucky, ethanol evaporates faster than water, so ABV can actually drop during aging. Sherry, Port, and Other Finishing Casks

Many spirits get a "finish" — a shorter secondary aging period in a cask that previously held another wine or spirit, such as Sherry, Port, or rum — layering that cask's residual flavor onto the base spirit for added complexity. The Chemistry of Char and Toast

Before a barrel is filled, coopers apply heat to the inside of the staves — either a direct open flame ("charring," standard for new Bourbon barrels) or a gentler, longer indirect heat ("toasting," more common for wine and some whisky casks). Both processes break down wood polymers, particularly lignin, into smaller aromatic compounds: vanillin comes largely from lignin breakdown, while caramelized wood sugars contribute toffee and butterscotch notes. Char depth is often graded on a numbered scale by cooperages, and different producers specify different char levels deliberately — a heavier char generally yields darker color and more overt caramel and smoke-adjacent notes, while a lighter toast preserves more of the wood's own tannin and spice character.

Barrel Size and Surface-to-Volume Ratio

A smaller barrel has more surface area of wood relative to the volume of spirit inside it, meaning aging happens faster — which is why some craft producers use small barrels to accelerate maturation, though many tasters find the result lacks the depth a slower, larger-barrel aging process builds over years. The standard Bourbon barrel (around 53 US gallons) and the various sizes used in Scotch aging (hogsheads, butts, puncheons) all represent different tradeoffs between aging speed, cask cost, and the flavor complexity a producer is aiming for.

Oxidation: The Slow Reaction That Rounds Out Flavor

Alongside direct extraction and evaporation, a slower and less visible process is happening throughout aging: trace amounts of oxygen pass through the wood and dissolve into the spirit, driving gradual oxidative reactions that mellow harsher notes, deepen color, and build some of the more complex, dried-fruit and nutty aromas found in long-aged spirits. This oxidative process is distinct from — but works alongside — direct wood extraction, and it's part of why an old, empty, resealed cask (with plenty of air inside but little fresh wood surface left to extract from) can still meaningfully change a spirit's character over an extended rest, even with comparatively little new flavor coming from the wood itself.

Non-Oak Aging Vessels

While oak dominates spirit aging by an overwhelming margin, it isn't the only wood historically or currently used — chestnut, cherry, and various regional hardwoods appear in some traditional European wine and spirit aging, each with its own porosity, tannin profile, and flavor contribution distinct from oak's. Some modern producers also experiment with non-wood aging vessels entirely, including large ceramic amphorae and stainless tanks fitted with wood staves or chips, seeking specific flavor or cost outcomes outside the traditional whole-barrel model — though full barrel aging in oak remains, by a wide margin, the dominant and most historically validated method across nearly every major spirit category.

How to Taste the Wood

Vanilla, coconut, and caramel notes point to American oak; drier spice, fine tannin, and dark fruit point to French oak or Sherry-cask influence. Color alone is a rough but useful clue — darker generally (not always) means longer or more active wood contact.
