American cider historically used whatever apples were locally available (often eating varieties), and much modern commercial American cider is sweeter and more heavily carbonated than its European counterparts — though a growing “heritage” and “farmhouse” cider movement has revived interest in traditional bittersweet varieties and wild fermentation. Early American cider, dating back to the colonial era, was often the default daily drink in regions where grape-growing for wine proved difficult, since apple trees adapted far more readily to a wider range of North American climates and soils.

Perry is made the same way as cider but from pears rather than apples, using specific perry pear varieties (also generally too astringent to eat fresh) and remains a small but historically significant category, particularly in England's West Midlands. Perry pear trees can take decades to reach full fruit-bearing maturity, considerably longer than typical cider apple trees, which has historically limited how quickly perry production can expand or respond to demand compared to cider.
Some individual perry pear trees are documented to be well over a century old and still productive, a longevity that has turned certain historic orchards into something close to living heritage sites, actively studied and preserved by conservation groups concerned about the category's shrinking genetic diversity.
Ice Cider: A Concentrated Variation
Ice cider, pioneered in Québec, concentrates apple sugars either by pressing juice from apples that have frozen naturally on the tree or by freezing the juice itself before fermentation, similar in principle to ice wine. The result is a intensely sweet, concentrated dessert-style cider with far higher sugar and acid concentration than standard cider, since freezing separates out much of the water content before fermentation ever begins.
Because ice cider requires reliably hard winter freezes, its production has remained concentrated in a fairly narrow band of cold-climate regions, making it one of the more geographically constrained cider styles despite its relatively recent invention compared to the centuries-old European traditions it draws from.
Cider and Food Pairing
Cider's acid-and-tannin structure makes it a natural partner for rich, fatty foods much the way red wine is — roast pork, aged cheddar, and charcuterie are classic English pairings, while French cidre traditionally accompanies savory buckwheat galettes in its home region of Brittany. Sweeter American-style cider, by contrast, pairs more like a light dessert wine, working well alongside spiced or fruit-based desserts rather than heavier savory fare.
Cider's Carbonation Styles
Cider ranges from fully still to fully sparkling, and the method used to carbonate it — natural bottle conditioning, forced carbonation, or the pétillant-naturel-style “pét-nat cider” bottled mid-fermentation — shapes texture as much as flavor. This growth has brought considerable stylistic diversification, from hopped ciders that borrow directly from IPA culture to barrel-aged ciders that pick up techniques more commonly associated with spirits or wine aging.
Cider Apple Cultivation Today
Growing genuine cider apples remains a smaller, more specialized branch of orchard agriculture than growing eating apples, since cider apple trees are often less productive by weight and take longer to reach full bearing maturity, discouraging large-scale commercial cultivation in regions without a strong existing cider tradition. This economic reality is part of why authentic bittersweet-and-bittersharp cider remains comparatively rare even in markets experiencing broader cider category growth, since scaling up genuine cider apple orchards can't happen as quickly as demand for cider itself.
