Why These Drinks Resist Easy Categorization
Wine, beer, and spirits form a tidy Western framework β fermented grapes, fermented grain with hops, and distilled versions of either β but that framework was never universal. Cultures that developed alcohol independently, without direct contact with European brewing or winemaking traditions, often arrived at production methods with no exact parallel elsewhere: sake's simultaneous starch-conversion-and-fermentation, pulque's undistilled agave sap, mead's grain-free honey base. Grouping them under one heading here isn't a claim that they're similar to each other so much as an acknowledgment that the standard categories simply don't have room for them.
Sake
Sake is often called "rice wine," but its production resembles beer more closely: rice starch must first be converted to sugar, a job done not by malting (as in beer) but by koji, a mold that grows on steamed rice. Uniquely, this conversion and the fermentation happen simultaneously in the same vessel β a process called multiple parallel fermentation, which allows sake to reach a naturally higher ABV (around 15β17%) than wine or beer without fortification or distillation. Sake's grading system, running from everyday Junmai through increasingly polished Ginjo and Daiginjo styles, tracks how much of the rice grain's outer layer is milled away before brewing.
Soju
Traditional Korean soju is distilled from fermented rice, wheat, barley, or sweet potato, giving it a soft, slightly sweet character. Most soju sold today, however, is made by diluting neutral spirit (often from tapioca or sweet potato starch) with water and a small amount of sweetener, producing the light, clean, low-ABV (around 16β20%) style familiar from Korean restaurants worldwide. This diluted style rose to dominance largely for economic and regulatory reasons β 20th-century rice shortages pushed producers toward cheaper starches and simpler processing, a shift only now being partly reversed by a small revival of traditionally distilled soju.
Mead
Mead may be the oldest fermented drink in human history, requiring nothing more than honey, water, and wild or added yeast. Because honey's sugar content and flavor vary enormously by the flowers bees visited, mead ranges from bone-dry and wine-like to lusciously sweet, and modern meaderies add fruit (melomel), spices (metheglin), or grain (braggot) to expand the style further. Its simplicity is deceptive, though β honey's high sugar concentration can make fermentation slow and unpredictable to start, since very sweet, low-moisture environments are initially inhospitable to yeast, a challenge that doesn't arise with the more diluted sugar concentrations typical of grape must or grain mash.
Pulque
Pulque is made by fermenting aguamiel ("honey water"), the sweet sap collected from the core of the maguey plant, without any distillation step β making it the direct ancestor of both tequila and mezcal, which are distilled from the same plant family. Milky white, mildly fizzy, and low in alcohol (around 4β6% ABV), pulque has been consumed in central Mexico for well over a thousand years and remains central to Indigenous Mexican culture today. Unlike most fermented drinks, pulque is traditionally kept as a continuously "living" fermentation rather than a finished, stable product, which is part of why it has historically traveled and kept so poorly outside its region of production.
What These Traditions Share
Despite their differences, sake, soju, mead, and pulque each grew out of whatever raw material was locally abundant β rice in Japan, grain and tuber starches in Korea, honey wherever wild or kept bees thrived, and agave across arid central Mexico β rather than importing a foreign template. Other Alternative Fermentations Worth Knowing
Beyond the four covered in depth here, other regional fermented drinks follow the same broad pattern of adapting to whatever local ingredient was available: kumis and airag (fermented mare's or other animal milk, historically important across Central Asian steppe cultures), palm wine (fermented sap from various palm species across parts of Africa and South and Southeast Asia), and chicha (traditionally fermented corn, historically significant across the Andes) all developed independently of the wine-beer-spirits framework in much the same way sake, mead, and pulque did.
Why These Categories Are Gaining Renewed Attention
Growing international interest in fermentation more broadly β driven partly by food science's renewed focus on fermented foods generally β has brought increased attention to alternative fermented drinks that were, for much of the 20th century, treated mainly as regional curiosities outside their home cultures. Sake in particular has benefited from this shift, now commonly found on wine lists in high-end restaurants worldwide, while mead's modern craft revival and pulque's growing pulquerΓa culture suggest the broader category's visibility is likely to keep growing rather than fade.

Serve sake slightly chilled to warm (never boiling hot, despite the stereotype) in a small cup to concentrate aroma; taste mead the way you would a dessert wine, noting honey character alongside sweetness and acidity; pulque is best tried fresh and cold, as it doesn't keep well once fermentation is complete. Soju, whether traditional or diluted, is typically served ice-cold in small shot-style glasses, meant to be drunk quickly rather than slowly nosed and savored.
