Fusel oils — a mix of higher alcohols with distinctly heavier, oilier character than ethanol — concentrate heavily in the tails, and their presence in trace amounts is actually prized in some traditional spirit styles for the textural weight and complexity they contribute, provided they're kept to a small enough proportion. This is why "tails" shouldn't be understood purely as a defect fraction — like the heads, it's more accurate to think of it as a set of compounds that are desirable only in very small, carefully judged doses.

Once a distillery settles on an ideal cut profile for a given product, that decision is typically documented carefully — target ABV ranges for switching fractions, characteristic aromas to watch for, sometimes even specific timing benchmarks for a given still and batch size — so the house style can be reproduced consistently across different stillmasters and over many years of production. This documentation effort doesn't eliminate the need for live sensory judgment on any individual run, since natural variation in fermentation and raw material still requires real-time adjustment, but it does give a distillery a reliable reference point anchoring its house style even as individual stillmasters come and go over a brand's history.
